About the Author

Trinidad born Judith Richardson, received her certification as a Vegetarian Cuisine Instructor in the year 2000 from Griggs University in Maryland. She was also the owner/manager of the extremely successful MARACAS VALLEY RESTAURANT in Orlando Florida, where she now resides. Presently Judith shares her knowledge, by hosting vegetarian cooking classes.
